Sucralose [E955] is an organic chemical compound derived from saccharose, with a sweetness 600 times greater than saccharose itself. It is formed from saccharose in a multi-stage chemical process - the so-called chlorination of sucrose - in the course of which it loses its absorption capacity in our digestive tract.
It is more universally applicable than, for example, aspartame, due to its greater stability over a wider temperature and pH range. Unlike other sweeteners of synthetic origin, it does not leave a bitter aftertaste in the mouth. It is ideal for use in the baking industry, food industry, as an additive in beverages, medical foods or in dietary supplements. It does not raise blood sugar levels, which is a great advantage of this sweetener for diabetics.
The recommended maximum daily intake (ADI) is 15 mg/kg body weight.
